Manual harvest, 1st-3rd week of October.
Winemaking
After the manual harvest of the clusters of grapes, without using any kind of pump, the clusters fall for graveness into the fermentation tank. The alcoholic fermentation takes place into stainless steel deposits of 25,000 kg for 14 days, under a controlled temperature of 24-26ºC, following the traditional carbonic maceration process (whole grapes are fermented in a tank unpeeled).
Smooth daily pumping. Subsequently, the manual pressing takes place, treading the grapes inside a tank in order to obtain the greatest amount of wine on a natural way.
Ageing
