Elaboración
Traditional Champenoise Method. After careful harvesting of the grape bunches, they are destemmed and placed in tanks where a cold pre-fermentation maceration takes place for 5 hours. The must is then pressed and clarified. Alcoholic fermentation was carried out in 1000-liter tanks. Fermentation lasted 25 days at a controlled temperature of 14-16ºC. The wine remained in contact with its fine lees for 5 months to extract the maximum amount of mannoproteins, with continuous bâtonnage (lees stirring). This base white wine was bottled for a second fermentation in centuries-old stone cellars. There, it remained on its lees for 24 months. Finally, it was disgorged by hand.
